Pumpkin Time!


Whenever, I think about the month of November. I think of Thanksgiving and Pumpkin Time! Pumpkins everywhere so many! What to do with them??? Well, Let's find out about the Orange food.Pumpkin refers to certain cultivars of squash for instance,canned Pumpkin puree and pumpkin pie fillings are usually made from different kinds of winter squash than the Pumpkins uses to carved a jack o'lanterns for Halloween.

You can cook Pumpkin so many ways with all type of recipes. Pumpkins are very versatile in their uses for cooking. Most parts of the Pumpkin are edible, including the fleshy shell, the seeds, the leaves, and even the flowers. In the United States and Canada, Pumpkin is a popular Halloween and Thanksgiving items.

Pumpkin can be boiled, baked, steamed, or roasted.Pumpkin mashed and making its way into soups and purees for pies. You can eat the seeds they are often roasted and season and eaten as a snack.

I Have Some Recipes For That Pumpkin Invasion

Pumpkin Soup
This simple pumpkin soup is a great starter for Thanksgiving dinner a creamy soup flavored with garlic, fresh thyme, and parsley. If you invited a vegetarian over for thanksgiving dinner this pumpkin soup with be a perfect just add vegetable broth in place of chicken broth.

Ingredients

6 cups chicken stock or vegetable broth

1 1/2 teaspoons salt

1/2 teaspoon white pepper

 4 cups pumpkin puree

 1 teaspoon chopped fresh parsley

 1 cup chopped onion

 1/2 teaspoon chopped fresh thyme

 1 clove garlic, minced

 1/2 cup heavy whipping cream


Directions

Heat stock, salt, pumpkin, onion, thyme, garlic,and white pepper. Bring to a boil turn heat to low and simmer for 30 minutes uncovered.Puree the soup in small batches (1 cup at a time) using a food processor. Return to pan, and bring to a boil again. Turn heat to low, and simmer for another 30 minutes, uncovered. Stir in heavy cream. Pour into soup bowls and garnish with fresh parsley.

Adding the flavor Beef to your Pumpkin will be a (WOW Moment)! With this Pumpkin Stew. Great dish  in this harvest month of November. All those potatoes and carrots just married to each other in a fall wedding with the pumpkin and beef gravy.



Ingredients

    2 pounds beef stew meat, cut into 1-inch cubes

    3 tablespoons canola oil divided

    1 cup water

    3 large potatoes, peeled and cut into 1-inch cubes

    4 medium carrots, sliced

    1 large green pepper, cut into 1/2-inch pieces
    
    4 garlic cloves, minced
   
    1 medium onion, chopped
    
    2 teaspoons salt
    
    1/2 teaspoon pepper

    2 tablespoons beef bouillon granules

    1 can (14-1/2 ounces) diced tomatoes


    1 pumpkin (small )       

Directions

In a Dutch oven, brown meat in 2 tablespoons oil. Add water, potatoes, carrots, green pepper, garlic, onion, salt and pepper. Cover and simmer for 2 hours. Stir in bouillon and tomatoes.

Wash pumpkin and place in a shallow sturdy baking pan. Bake at 325° for 2 hours or just until the pumpkin is tender (do not over bake). add meat and veggies mixture to baked pumpkin.

Pumpkin Bread with Raisins and Pecans

You got to have bread with those harvest soups and stews so let's have some old fashion pumpkin bread with butter or a great cup of hot spicy tea. It's harvest time yall!


2 cups pumpkin puree

1/2 cup vegetable oil

2 eggs

1 cup brown sugar

1 1/2 cups plus 1 tablespoon flour

1/2 teaspoon salt

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1/4 teaspoon allspice

1/4 teaspoon ginger

1/2 cup golden raisins

1/2 cup coarsely chopped pecans

Preheat oven to 325 degrees. Grease a 9 X 5 loaf pan with butter. In a large mixing bowl, mix together the pumpkin, oil, eggs and brown sugar on medium speed until well blended. In a separate bowl, combine the flour, salt, baking soda, baking powder, and spices. Stir into the pumpkin mixture and mix on low until combined. Fold in the raisins and pecans and pour batter into loaf pan. Bake for 55 – 65 minutes or until a toothpick comes out clean when inserted in the center of the loaf.
